Peveril Vineyard - Wine
The Peveril Vineyard cellar door is in a shed directly off the Colac-Lavers Hill Road. It is built from local timbers by a local, small and tasteful. The wines, like the berries, are grown with natural nutrients and no chemicals. The sole exception is the anti-fungal spray used sparingly on the vines. Other than that the grapes are the product of pure water and soil. Small, tasteful, clean. That’s the way the Rossiters want to go on this patch of perfection.
Pinot noir
The Pinot is a smooth and warming drop with low acidity and gentle tannins from 9 months in French oak barriques. It has developed further in the bottle and will continue to improve with age.
Sauvignon blanc
A well balanced wine with lingering fruit and low acidity, it is the perfect choice to accompany Asian dishes and fish, especially the more spicy dishes.
Chardonnay
Has developed typical fruit flavours again with low acidity and tannins. The oiliness sometimes typical of chardonnay is not overpowering and the overall experience is one to enjoy with light luncheons on a lazy afternoon.
Riesling
Continues to develop well in the bottle over 3-6 months with good acid levels for longevity.
Beechy Berries
Hand-picked chemical-free blueberries at the farm gate from January through March. Varieties include ‘Brigitta’,‘Denise’, ‘O’Neil’, ‘Nui’ and ‘Northland’ varieties. Frozen blueberries available at other times of the year.
